Dominique Shelton, Chef de Cuisine
Chef Dominique Shelton grew up in Florida, where a highlight of his week was joining his mother at the local farmers market. Shelton and his mother selected the freshest produce and cooked family dinners together each week. The eldest of 7 siblings, including an identical twin brother, Shelton developed an early love for the kitchen, where he enjoyed being exposed to different flavors, ingredients and creating unique dishes with his family.
In his early 20’s, Shelton made his move to California to further explore his culinary career by working in restaurants. He landed at Cleo Hollywood, where he refined his skills in cuisine before making the move to Aka Bistro in Pasadena, where he focused on creating sustainable and organic dishes. Earning the respect of Chefs along the way, Shelton learned his skills from working alongside some of the best in the industry.
He later became Sous Chef at Bistro 45, where under his Executive Chef, he created eclectic New American and French-style dishes before joining The Langham Huntington, Pasadena at The Royce Wood-Fired Steakhouse in 2013. Shelton was quickly promoted to Sous Chef in 2015 and Chef de Cuisine in 2016.
Today at The Royce Wood-Fired Steakhouse, Chef Shelton brings a straightforward culinary approach to the menu, emphasizing fresh, seasonal ingredients and natural flavors. The restaurant serves the finest USDA Prime Cuts, Australian Wagyu and Japanese Kobe Beef, expertly prepared over a wood-fired grill, along with seasonal seafood and sides.
